Founder Adam Brian Kaiser didn’t take a traditional path into chocolate. With a background in geology and years as an environmental consultant, he was used to studying layers of soil and rock — not layers of ganache. But after a lifetime of quietly nurturing a love for cooking and food, chocolate revealed itself as more than a passion — it was a path waiting to be followed.

The turning point came just after his wedding. A box of lackluster chocolates left in the honeymoon suite sparked a realization: if there’s a market for products like this, then there’s certainly room to offer something more refined. The kind of chocolate he had fallen in love with — the kind he could only find in places like New York City — could be brought to Central New York, where fresh, local ingredients are even more abundant.

Adam Brian Chocolat was born in that moment.

Today, each bonbon is made by hand in small batches using organic, ethically sourced ingredients, with every filling — from jams to ganaches to nut pastes — crafted in-house. Nothing artificial. We avoid seed oils, preservatives, and synthetic colorings, instead letting the beauty of simple ingredients and seasonal flavors shine. Every element is produced with precision: the shell, the filling, the balance of taste and texture.

The visual design of our bonbons reflects that same care. Each piece is decorated as a tribute to the flavor inside or custom-designed for a season or special occasion.
